Capellini Pancetta Frittata

Serves 10–12 as an appetizer

¼ pound capellini, broken into ½-inch lengths

1 tablespoon salt

4 eggs, beaten

1 cup shredded mozzarella

Salt and freshly ground black pepper to taste

Pinch dried hot red pepper flakes

6 thick slices pancetta, cut into small pieces and cooked until crisp

1 cup frozen tiny peas, thawed

1/3 cup freshly grated Parmesan cheese

1 tablespoon olive oil

3 cloves garlic, crushed
